Author's Notes

Instead of broccoli and sugar snap peas, you can use any seasonal green vegetable, such as green beans.

If you have no mortar or want to skip the first two steps, you can substitute with 80 g of sesame paste or even tahini (a Middle Eastern condiment made from toasted ground hulled sesame).

In a large dry frying pan, toast the White Sesame Seeds (1/3 cup) over medium heat until a few sesame seeds start to pop. Turn the heat off and set 1 Tbsp of sesame aside for garnishing.

Using a mortar and pestle, grind the sesame seeds. This brings out their flavor.

Wash the Broccoli (1 2/3 cups) and divide it into coarse florets.

In a medium saucepan or pot, bring Water (4 cups) to a boil with Salt (1/2 Tbsp).

Put the broccoli florets in the boiling water and cook for about 45 seconds.

After 45 seconds, add Sugar Snap Peas (1/3 cup) in it and cook them together for about 10-15 seconds.

Scoop the vegetables with a mesh ladle and let them cool.

Cut the broccoli florets into bite-sized pieces and cut the snow peas into thirds lengthwise.

In the mortar bowl, thoroughly mix the sesame seeds with the Soy Sauce (1 Tbsp) and Granulated Sugar (1/2 Tbsp). Add the vegetables and toss the vegetables with the mixture.

Sprinkle the reserved sesame seeds on top of the vegetables as garnish. You can serve it as is, or divide it into 2 bowls for serving.
