Step 1
Start by cutting the ends of the
Spaghetti Squash (2)
and then cut in half.
Step 2
Clean the insides of the squash then spread some
Oil (as needed)
inside. Season with
Salt (to taste)
and
Ground Black Pepper (to taste)
.
Step 3
Cook the squashes in a microwave oven for 10-15 minutes in batches of 2.
Step 4
Warm up the
Canned Diced Tomatoes (3 2/3 cups)
in a pot on medium heat. Add
Italian Seasoning (to taste)
and
Fresh Basil Leaves (to taste)
. Mix well.
Step 5
Pour sauce over
Frozen Meatballs (3 lb)
in a bowl.
Step 6
Take a fork and scrape the bottom and around the sides of all the squashes. You can leave the squash inside the skin as a "bowl" or transfer it to a plate.
Step 7
Top the squashes with meatballs and sauce. Place in a microwave oven for 5 minutes.
Step 8
Remove from microwave and top with
Mozzarella Cheese (4 cups)
and
Dried Parsley (to taste)
. Serve and enjoy!
