Step 1
In a blender, add
Old Fashioned Rolled Oats (2 cups)

Corn Starch (2 Tbsp)

Baking Powder (1/2 Tbsp)

Baking Soda (1/2 tsp)

Eggs (2)

Buttermilk (1 1/2 cups)
, and
Fresh Baby Spinach (2 3/4 cups)

Step 2
Add the
Vegetable Oil (1/3 cup)
,
Vanilla Extract (1/2 tsp)
,
Pandan Extract (1 tsp)
,
Granulated Sugar (2 Tbsp)
, and
Salt (1/2 tsp)
. Blend until very smooth. Let it sit for about 10 minutes to thicken.
Step 3
Preheat your waffle maker and grease the waffle maker according to the manufacturer's instructions.
Step 4
Pour about half a cup of batter, or more, depending on the size of your waffle maker.
Step 5
Cook until golden brown and crispy; about 6 to 7 minutes. See manufacturer's instructions for recommended time. Remove the finished waffle, and repeat the process for the remaining batter.
Step 6
Let it cool on a wire rack. Serve warm with
Maple Syrup (to taste)
and
Fresh Fruits (to taste)
