Author's Notes

If using the oven, preheat the oven to 375 degrees F (190 degrees C). Place chicken breasts in a baking dish and bake uncovered for 15-20 minutes.

Store the leftover chicken in an airtight container in the fridge for 3-4 days. Reheat for a few minutes in the microwave, oven, or air fryer until warm.

Marinate the Chicken Breasts (4) in Extra-Virgin Olive Oil (1 Tbsp), Lemon Juice (1/2), Garlic (2 cloves), Salt (to taste), and Ground Black Pepper (to taste), while you prep the rest of the ingredients.

If using the air fryer, preheat to 375 degrees F (190 degrees C). Once preheated, add the chicken to the air fryer basket and cook for 15-20 minutes.

Meanwhile, make the pesto sauce by combining Fresh Basil (1 cup), Fresh Spinach (1 cup), Extra-Virgin Olive Oil (1/2 cup), Lemon Juice (1/2), Garlic (2 cloves), Salt (to taste), and Ground Black Pepper (to taste) in a blender or food processor and pulse until the mixture is smooth.
step 3 Meanwhile, make the pesto sauce by combining Fresh Basil (1 cup), Fresh Spinach (1 cup), Extra-Virgin Olive Oil (1/2 cup), Lemon Juice (1/2), Garlic (2 cloves), Salt (to taste), and Ground Black Pepper (to taste) in a blender or food processor and pulse until the mixture is smooth.

Remove the chicken from the air fryer or oven and top each breast with 2 slices of Vine-Ripened Tomato (1) and 2 slices of Mozzarella Cheese (2 cups).

Place the chicken back in the air fryer or oven and cook for an additional 8-10 minutes until the cheese is melted and the chicken is cooked through (internal temperature should read 165 degrees F (70 degrees C).
