Step 1
Marinate the
Tyson® Chicken Breasts (4)
in
Extra-Virgin Olive Oil (1 Tbsp)
,
Lemon Juice (1/2)
,
Garlic (2 cloves)
,
Salt (to taste)
, and
Ground Black Pepper (to taste)
, while you prep the rest of the ingredients.
Step 2
If using the air fryer, preheat to 375 degrees F (190 degrees C). Once preheated, add the chicken to the air fryer basket and cook for 15-20 minutes.
Step 3
Meanwhile, make the pesto sauce by combining
Fresh Basil (1 cup)
,
Fresh Spinach (1 cup)
,
Extra-Virgin Olive Oil (1/2 cup)
,
Lemon Juice (1/2)
,
Garlic (2 cloves)
,
Salt (to taste)
, and
Ground Black Pepper (to taste)
in a blender or food processor and pulse until the mixture is smooth.
Step 4
Remove the chicken from the air fryer or oven and top each breast with 2 slices of
Vine-Ripened Tomato (1)
and 2 slices of
Mozzarella Cheese (2 cups)
.
Step 5
Place the chicken back in the air fryer or oven and cook for an additional 8-10 minutes until the cheese is melted and the chicken is cooked through (internal temperature should read 165 degrees F (70 degrees C).
Step 6
Top the chicken breasts with about 2 Tbsp of pesto sauce. Serve immediately and enjoy!
