Preheat the oven to 450 degrees F (230 degrees C).

Grill Brie Cheese Round (1) over medium heat for about 3 minutes per side.

Carefully transfer Brie to a round cast-iron pan or ovenproof dish. Top with Plum (1), Shallot (1), Garlic (1 clove), and Fresh Thyme (4 sprigs).

Drizzle the Extra-Virgin Olive Oil (2 Tbsp) and Aged Balsamic Vinegar (2 Tbsp) evenly over the top. Season with Coarse Kosher Salt (1/2 tsp) and Freshly Ground Black Pepper (1/2 tsp).
