step 1
Preheat the oven to 400 degrees F (200 degrees C).
step 2
In a large bowl, whisk together All-Purpose Flour (1 3/4 cups), Unsweetened Cocoa Powder (2/3 cup), Salt (as needed), Baking Soda (1 tsp), and Baking Powder (1 tsp) until well mixed.
step 3
In a large jug or bowl, whisk together the Butter (1/2 cup), Farmhouse Eggs® Large Brown Eggs (sponsored) (2), Buttermilk (1 cup), Granulated Sugar (1 1/4 cups), and Vanilla Extract (2 tsp).
step 4
To the dry ingredients, add the buttermilk mixture. Using a rubber spatula, a whisk, or a wooden spoon, mix until well combined and there are no lumps. Fold in Semi-Sweet Chocolate Chips (1 cup).
step 5
Using an ice cream scoop or 2 spoons, fill the muffin cups 3/4 of the way, and top with more chocolate chips.
step 6
Bake for 23-25 minutes or until a toothpick inserted in the middle comes out clean.
step 7
Cool in the pan for 5 minutes then remove and allow to cool completely.
