This ground beef and rice casserole is the perfect recipe to use your leftovers in. Feel free to use cooked rice from the day before.

You can use any mix of vegetables you have or a frozen vegetable mix. For this recipe, I had some carrots, green peppers, and corn in the fridge, which worked great. But you can make this casserole with mushrooms, peas, broccoli, or any other vegetables you like. Don’t use vegetables with high water content like zucchini, celery, or cucumbers because they can make your casserole too soggy.

Preheat the oven to 350 degrees F (180 degrees C).

In a large skillet over medium-high heat, warm the Olive Oil (1 Tbsp). Add the Onion (1) to the pan and cook until tender.

Add the Ground Beef (1.5 lb), Garlic (2 cloves), Paprika (1 tsp), Brown Sugar (1/2 tsp), Salt (to taste), and Ground Black Pepper (to taste). Stir and continue cooking until the beef is browned; about 15 minutes.
