Step 1
Slice the
Pork Loin (1 lb)
into ¼-inch slices.
Step 2
Place the pork in a mixing bowl, add
Soy Sauce (1 Tbsp)

Shaoxing Cooking Wine (1/2 Tbsp)

Fresh Ginger (1/2 Tbsp)
,
Corn Starch (1/2 Tbsp)
, and
Baking Soda (1/2 tsp)
. Mix until well coated and set aside.
Step 3
In a small mixing bowl, combine
Water (1/2 cup)
,
Soy Sauce (2 Tbsp)
,
Oyster Sauce (2 Tbsp)
,
Corn Starch (1/2 Tbsp)
, and
Brown Sugar (1/2 Tbsp)
. Set aside.
Step 4
Heat the
Cooking Oil (2 Tbsp)
in the pan over medium heat, and add
Fresh Ginger (1 piece)
,
Garlic (2 cloves)
, and the white part of the
Scallions (3 stalks)
. Stir until fragrant about 2 minutes.
Step 5
Stir in the pork. Cook for 3-4 minutes or until the pork is almost cooked.
Step 6
Then add the sauce mixture and the green part of the scallion. Stir and cook for about 2 minutes.
Step 7
Optionally, crack some
Freshly Ground Black Pepper (to taste)
over the top before serving with
White Rice (to taste)
