Prepare the Lemon (1), Bay Leaf (4), Dried Chili Pepper (3) and Star Anise (2).
Slice the lemon into quarters, while making sure to keep it whole. Season the inside heavily with Kosher Salt (to taste).
Place the lemon in a container with the bay leaves, star anise, dried chili, and Granulated Sugar (1 tablespoon).
Let the container sit either in the fridge for 3 days, or at room temperature for 2 days.
