Step 1
Prepare the
Lemon (1)

Bay Leaves (4)

Dried Chili Peppers (3)
and
Star Anise (2)

Step 2
Slice the lemon into quarters, while making sure to keep it whole. Season the inside heavily with
Kosher Salt (to taste)
.
Step 3
Place the lemon in a container with the bay leaves, star anise, dried chili, and
Granulated Sugar (1 Tbsp)
.
Step 4
Let the container sit either in the fridge for 3 days, or at room temperature for 2 days.
