Cooking Instructions
1.
Preheat the oven to 400 degrees F (200 degrees C). Boil a large pot of salted water for the Penne Pasta (1 lb).
2.
Grate the Cheddar Cheese (8 oz) and chop the Onion (1). When pasta is al dente (cooked but firm), drain and rinse with cold water. Set aside.
3.
Sauté the onion in Salted Butter (2 oz) until softened and fragrant. Add the All-Purpose Flour (1/2 cup) and stir vigorously.
4.
Pour in Milk (4 cups) and whisk over moderate heat until smooth, thickened, and starts to boil. Remove from the heat.
5.
Add Canned Tuna in Water (1 cup), Sweet Corn Kernels (1 can), 3/4 of the cheese, and Italian Flat-Leaf Parsley (1 handful). Mix until evenly combined. Season well with Salt (to taste) and Freshly Ground Black Pepper (to taste).
6.
Transfer into a large baking dish and top with remaining cheese.
7.
Bake in the oven for 20 minutes or until golden and bubbling.
8.
Sprinkle with parsley or chives and serve immediately.
Author's Notes
Yields 4-6 servings.
For a saucier pasta bake, remove 1/4 of the penne in the recipe.
Macaroni pasta is also a good option for this recipe.
To change things up weekly, Tuna can be replaced with 2 cups of shredded left-over roast chicken or 1/2 lb bacon (to be fried with onions).
