While Cod or Haddock is the most traditional option, Tilapia is a good and cost-effective option too.

The best way to thaw out frozen fish is to take it out of the freezer in the morning and keep it in the fridge to thaw out. If in a rush, submerge frozen fish in cold water until defrosted.

To test if the oil is hot enough for deep frying, drop a dollop of batter into the oil, if it sizzles and floats to the top immediately, you are ready to fry! If the oil is not hot enough the fish will stick to the base of your pot or frying basket, which is never fun.

For the batter, place All-Purpose Flour (1 cup), Corn Starch (1/4 cup), Baking Powder (1/2 Tbsp), Cayenne Pepper (1 tsp), Ground White Pepper (1/2 tsp), Salt (1 tsp), Freshly Ground Black Pepper (1 tsp) into a mixing bowl.

Heat the Cooking Oil (as needed) for deep frying at 360–375 degrees F (180-190 degrees F). At this stage, pop the French Fries (7 3/4 cups) in a 400 degrees F (200 degrees C) air fryer for 8-10 minutes (or bake on a tray in the oven for 15–20 minutes) until golden and crispy.
