Author's Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Make sure to transfer any leftover honey mustard sauce to the container.

Reheat leftover chicken in the microwave, or on the stovetop in a lidded skillet.

Preheat oven to 375 degrees F (190 degrees C).

In a small skillet, cook Smoked Hickory Bacon (4 slices) until crisp. Remove to drain and crumble. Set aside.

In a 9x9-inch glass baking dish, stir together Dijon Mustard (1/4 cup), Honey (1/2 cup), Dried Rosemary (1/2 tsp), Chicken Breasts (2), Salt (to taste), and Ground Black Pepper (to taste) until well mixed. Dot the top with Butter (1 1/2 Tbsp).

Bake in the oven for 20 minutes.

Remove from oven, stir, top with cooked bacon and bake another 5 minutes.

Stir again, top with Dried Chives (to taste), and serve over rice.
