Make sure to use a turkey that hasn’t been pre-brined; otherwise, your bird will be too salty. Pre-brined turkeys are usually labeled “enhanced”, “kosher”, “self-basting”, or “basted”.

In a large pot, combine Whiskey (3 cups), Maple Syrup (2 cups), Apple Cider (1 cup), Kosher Salt (1 cup), Peppercorns (2 Tbsp), Bay Leaves (4), Garlic (5 cloves), Fresh Rosemary (3 sprigs), Orange Peels (3), Apple Peels (3), and Water (8 cups).

Bring the mixture to a boil and stir until the salt dissolves completely. Turn off the heat, cover, and chill completely.

Place your turkey in a large pot or a brining bag and pour in the maple whiskey brine. Make sure the bird is completely submerged. Leave the turkey to brine in the fridge for 12 to 24 hours.
