Step 1
In a Dutch oven or deep skillet, over medium-high heat, add
Olive Oil (2 Tbsp)
. Once the oil is hot, add the
Garlic (1 tsp)
and cook for about 30 seconds while stirring constantly.
Step 2
Add
85/15 Lean Ground Beef (1 lb)
and break it up until it is completely browned.
Step 3
When cooked through, add the
Taco Seasoning (1 Tbsp)
and mix in well.
Step 4
Add the
Medium Salsa (1 cup)
and stir.
Step 5
Add the
Tomato Paste (1/2 Tbsp)
and stir until it’s dissolved into the meat.
Step 6
Add the
Chicken Broth (2 1/2 cups)
,
Long Grain White Rice (1 3/4 cups)
,
Canned Corn (1 1/3 cups)
,
Canned Black Beans (1 cup)
, and
Salt (1/2 tsp)
and stir well.
Step 7
Lower the heat to medium-low and cover the pot. Cook for 20-25 minutes or until no longer watery.
Step 8
After 20-25 minutes, add the
Scallions (1/4 cup)
and
Shredded Mozzarella Cheese (1 pckg)
. Stir in well.
Step 9
Sprinkle the other package of
Shredded Mozzarella Cheese (1 pckg)
evenly over top. Cover for 2 minutes or until cheese is melted over top.
Step 10
Uncover, sprinkle
Fresh Cilantro (to taste)
evenly over top, and serve!
