Author's Notes

This recipe is best made ahead and chilled for at least 2-4 hours (or overnight).

Use a kettle to heat the water for fewer dishes!

Cooking Instructions

Step 1
Bring a large pot of water to a boil. Place the Rice Noodles (1 pckg) in a large heat-safe bowl. Carefully pour the boiling water overtop. Cover and let it sit for 5-10 minutes.
Step 2
Meanwhile, make the dressing. Whisk together Toasted Sesame Oil (1/2 Tbsp) , Soy Sauce (1 Tbsp) , Nut Butter (1/3 cup) , Seasoned Rice Vinegar (1/4 cup) , Ginger Paste (1 tsp) , and Garlic Paste (1 tsp) . Season with Salt (to taste) .
Step 3
Drain the noodles carefully, and rinse in the sink using a colander until they have cooled down a little. Toss together in a large bowl with the dressing.
Step 4
Plate with Cucumber (1) , Edamame (1 cup) , Scallions (1 bunch) , and a sprinkle of Sesame Seeds (1 Tbsp) .
