This recipe is best made ahead and chilled for at least 2-4 hours (or overnight).

Use a kettle to heat the water for fewer dishes!

Bring a large pot of water to a boil. Place the Rice Noodles (1 pckg) in a large heat-safe bowl. Carefully pour the boiling water overtop. Cover and let it sit for 5-10 minutes.

Meanwhile, make the dressing. Whisk together Toasted Sesame Oil (1/2 Tbsp), Soy Sauce (1 Tbsp), Nut Butter (1/3 cup), Seasoned Rice Vinegar (1/4 cup), Ginger Paste (1 tsp), and Garlic Paste (1 tsp). Season with Salt (to taste).

Drain the noodles carefully, and rinse in the sink using a colander until they have cooled down a little. Toss together in a large bowl with the dressing.
