Step 1
Preheat the oven to 400 degrees F (200 degrees C).
Step 2
On a sheet pan, place
Red Bell Peppers (6)
and rub them with olive oil. Cover with aluminum foil and bake in the preheated oven for 20-25 minutes or until soft. Remove from the oven.
Step 3
Transfer to a bowl to cool for about 20 minutes.
Step 4
Once the peppers have cooled down, remove stems and skins. Cut them open to remove the seeds. Then cut into strips.
Step 5
Toss gently together with
Olive Oil (1/2 cup)
and
Red Wine Vinegar (1/2 cup)
. Season with
Garlic (2 cloves)
,
Italian Seasoning (1 tsp)
,
Salt (to taste)
, and
Ground Black Pepper (to taste)
.
Step 6
Garnish with
Fresh Basil (to taste)
and serve at room temperature. They taste best on toasted bread!
