For the remaining peppers, place in an airtight jar and refrigerate for up to a week.

Preheat the oven to 400 degrees F (200 degrees C).

On a sheet pan, place Red Bell Peppers (6) and rub them with olive oil. Cover with aluminum foil and bake in the preheated oven for 20-25 minutes or until soft. Remove from the oven.

Transfer to a bowl to cool for about 20 minutes.

Once the peppers have cooled down, remove stems and skins. Cut them open to remove the seeds. Then cut into strips.

Toss gently together with Olive Oil (1/2 cup) and Red Wine Vinegar (1/2 cup). Season with Garlic (2 cloves), Italian Seasoning (1 tsp), Salt (to taste), and Ground Black Pepper (to taste).

Garnish with Fresh Basil (to taste) and serve at room temperature. They taste best on toasted bread!
