Step 1
Preheat the oven to 350 degrees F (180 degrees C).

Spray a 12-well muffin tin with cooking spray.

In a large bowl, whisk the
Large Eggs (8)
with the
Shredded Cheddar Cheese (1 cup)

Whole Milk (1/3 cup)

Salt (1/4 tsp)

Freshly Ground Black Pepper (1 tsp)
until combined.

Add the
Tomato (1)

Fresh Baby Spinach (1/2 cup)

Ham (1 cup)
, and
Scallions (1/3 cup)
. Stir to combine.
Step 5
Divide the mixture evenly among the muffin cups, about 1/4 cup in each cup.
Step 6
Bake for 15-18 minutes, or until they are set, puffed, and lightly golden. They will deflate once removed from the oven, that’s totally normal.
Step 7
Garnish with more scallions and serve warm.
