step 1
Preheat the oven to 425 degrees F (220 degrees C).
step 2
In a large skillet over medium heat, cook the Bacon (8 slices) until browned and crispy, about 5-10 minutes. Take out the bacon once it is crispy and place it onto a lined paper towel to drain excess oil. Leave about 1 Tbsp of bacon fat in the pan.
step 3
In the same pan over medium heat, add the Lima Beans (1 can), Diced Tomatoes (1 can), and Philadelphia Original Soft Cheese (4 Tbsp) and cook until the cheese is melted and combined with everything.
step 4
Add half of the bacon, Salt (to taste), and 1 cup of the Shredded Mexican Cheese Blend (1 cup) and stir until melted.
step 5
Top with the remaining Shredded Mexican Cheese Blend (1 cup) and transfer to the oven to broil until the top is browned, about 3-5 minutes.
step 6
Arrange the Avocado (1) on top, sprinkle the other half of the bacon, and garnish with Fresh Cilantro (to taste). Serve with Tortilla Chips (to taste) and Limes (to taste).
