Cooking InstructionsHide images
step 1
In a large bowl, combine the Butter (4 Tbsp) with Milk (1 cup) and Egg (1). Whisk until combined.
step 2
In a medium mixing bowl, add All-Purpose Flour (2 cups), Salt (as needed), and Baking Powder (as needed). Whisk until combined.
step 3
In the wet mixture bowl, gradually add the dry mixture and use a spatula to mix until it becomes dough.
step 4
Dust a cleaned surface with flour, then place the dough on top. Dust your hands with flour. You can start kneading the dough with a food scraper by folding it, and when the dough is less sticky, you can use your hands to knead until the dough is soft and doesn’t stick to your hands for about 6 minutes.
step 5
Shape the dough into a ball and cover with plastic wrap or a clean towel, and leave it at room temperature for 15-20 minutes.
step 6
Meanwhile, prepare the filling by mixing the Frozen Cherries (2 cups) with Granulated Sugar (1 cup) in a mixing bowl. Set aside.
step 7
When the dough is ready, dust the surface and rolling pin with flour, and roll out the dough to about ⅛-inch thick.
step 8
Then use a cookie cutter or round mold to cut into round pieces. Roll the remaining dough into a sheet again and cut into sheets until the dough is finished. It should be about 25-30 sheets.
step 9
Drain the liquid from the cherry filling and save the cherry liquid for drizzling later when you serve or use it as a cherry syrup for drinks.
step 10
Fill each wrapper with a cherry mixture. Press some of the water around the edge. Fold to half, seal the edge together firmly, and ensure to not get the filling on the edges. Otherwise, the dumplings will fall apart while cooking. Repeat until you finish it all.
step 11
In a large pot, bring the Water (4 cups) to a boil, then add Salt (as needed) and the dumplings in batches. Boil for 2-3 minutes until they float to the top and use a slotted spoon to scoop them out. Immediately stir in some butter.
step 12
Serve the vareniki with Sour Cream (1 cup) and cherry liquid on top if desired. Optionally, garnish with Fresh Mint (to taste).
