Step 1
Preheat the oven to 350 degrees F (180 degrees C).

Peel and remove the core from 3 of the
Granny Smith Apples (6 cups)
, cut into about ¼-inch cubes, and add into a medium mixing bowl. Add half of the
Lemon Juice (1/2)
, then mix until well combined.

For the remaining apple, thinly slice it and transfer it to a separate bowl with the remaining
Lemon Juice (1/2)
.

In a large mixing bowl, use a hand mixer to beat the
Large Eggs (6)
and
Granulated Sugar (1 1/2 cups)
together until dissolved. Then add
Vanilla Extract (1 tsp)
,
Sour Cream (1/4 cup)
, and a pinch of
Salt (1 pinch)
. Beat until just combined.
Step 5
Sift the
All-Purpose Flour (2 cups)
and
Baking Powder (1 tsp)
into a mixing bowl of the wet mixture. Use a spatula to fold the batter until just combined.
Step 6
Spray the cake pan with
Non-Stick Baking Spray (as needed)
. Set aside.
Step 7
Arrange diced apples in a cake pan. Pour the batter over the top, evenly spread. Make sure to spread the mixture evenly in each layer. Slightly shake the cake pan to remove the air bubble.
Step 8
Arrange the apple slices on top of the batter. Bake in the oven for about an hour or until the toothpick comes clean.
Step 9
Remove the cake from the oven, and let the cake slightly cool down before removing it from the cake pan and slicing.
Step 10
Optionally, dust with
Powdered Confectioners Sugar (1 Tbsp)
on top. Serve.
