This Easy Puff Pastry Peach Galette with Ice Cream is a delicious and simple dessert to celebrate National Peach Month. Roll out a sheet of puff pastry, spread cream cheese and apricot preserve mixture over it, top with sliced peaches, drizzle with honey and sprinkle with sugar and cinnamon. Fold the edges of the pastry over the peaches, brush with beaten egg, and bake until golden brown. Serve with a scoop of vanilla ice cream for a sweet and satisfying treat!

Puff Pastry

1 Tbsp
All-Purpose Flour
•

Ripe Peach
•
4 Tbsp
Mascarpone Cheese
 or Cream Cheese
•
2 Tbsp
Apricot Preserves
 or Any Fruit Jam or Preserves
•
1 Tbsp
Honey
•
1 Tbsp
Granulated Sugar
•
1/2 tsp
Simply Organic Cinnamon, Ground
•
2 pinches
Salt
•

Eggland's Best Classic Egg , beaten
•
1 scoop
Vanilla Ice Cream

Cooking Instructions

1. 
Preheat the oven to 350 degrees F (180 degrees C).
2. 
In a small bowl, mix together Mascarpone Cheese (4 Tbsp) with Apricot Preserves (2 Tbsp) and a pinch of Salt (1 pinch) until well combined.
3. 
Sprinkle the All-Purpose Flour (1 Tbsp) and roll out a sheet of Puff Pastry (1 sheet) and transfer it to an oven-safe pan.
4. 
Spread the mascarpone mixture evenly over the puff pastry, leaving about an inch of border around the edges.
5. 
Arrange the Peach Slices (1) on top of the cream cheese mixture, starting on the outside with larger peach slices, and placing the smaller pieces in the center.

Drizzle Honey (1 Tbsp) over the peaches and evenly sprinkle with Granulated Sugar (1 Tbsp) , Simply Organic Cinnamon, Ground (1/2 tsp) , and a pinch of Salt (1 pinch) .
7. 
Fold the edges of the puff pastry over the peaches, pleating as you go.
8. 
Brush the edges of the puff pastry with a beaten Eggland's Best Classic Egg (1) .
9. 
Place the oven-proof pan over medium heat. Allow the bottom side of the pastry to heat up. This should take about 5 minutes.
10. 
Then transfer the pan into the oven and bake for 20 minutes, until the puff pastry is golden brown and the peaches are tender.
11. 
Let cool for a few minutes before serving with a scoop of Vanilla Ice Cream (1 scoop) .
