Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
Into a mixing bowl, add All-Purpose Flour (2 1/2 cups) , Baking Powder (1 tsp) , Baking Soda (1 tsp) , Brown Sugar (1 cup) , Ground Cinnamon (1 tsp) , Ground Ginger (1/2 tsp) , and Dry Mixed Spice (1/2 tsp) . Stir to combine.
Step 3
Into another bowl, add Canned Pumpkin Purée (2 cups) , Vegetable Oil (3/4 cup) , Water (1/4 cup) , and Vanilla Extract (1/2 Tbsp) .
Step 4
Add the pumpkin mixture to the dry ingredients a bit at a time until it has all been combined. Be careful not to over-mix.
Step 5
Pour the batter into a lightly greased loaf pan lined with nonstick baking paper. Smooth out the surface.
Step 6
Bake for 45 minutes, or until a skewer inserted into the center of the loaf comes out clean.
Step 7
Allow loaf to cool for 15-20 minutes.
Step 8
Serve and enjoy!
