Preheat oven to 350 degrees F (180 degrees C).
Into a mixing bowl, add All-Purpose Flour (2 1/2 cup), Baking Powder (1 teaspoon), Baking Soda (1 teaspoon), Brown Sugar (1 cup), Ground Cinnamon (1 teaspoon), Ground Ginger (1/2 teaspoon), and Dry Mixed Spice (1/2 teaspoon). Stir to combine.
Into another bowl, add Canned Pumpkin Purée (15 ounce), Vegetable Oil (3/4 cup), Water (1/4 cup), and Vanilla Extract (2 teaspoon).
Add the pumpkin mixture to the dry ingredients a bit at a time until it has all been combined. Be careful not to over-mix.
Pour the batter into a lightly greased loaf pan lined with nonstick baking paper. Smooth out the surface.
Bake for 45 minutes, or until a skewer inserted into the center of the loaf comes out clean.
Allow loaf to cool for 15-20 minutes.
