step 1
In a medium size bowl, whisk together the All-Purpose Flour (2 1/4 cups), Salt (1/2 tsp), Baking Soda (1 tsp) and Corn Starch (2 tsp), set aside.

In a large bowl or using a hand electric mixer, cream together the Butter (1 cup), Brown Sugar (1 cup) and Granulated Sugar (1/2 cup) until well blended. You can use a spatula but its much more difficult.

Add the Eggland's Best Classic Eggs (2) and Vanilla Extract (2 tsp). Mix until well incorporated.

Add the flour mixture and mix until it forms a cookie dough. Add Chopped Pecans (1 1/2 cups) and fold them in. Cover the bowl and chill in the fridge for at least 1 hour or up to 4 days.

Use a spoon or small scooper to scoop 1 tablespoon of dough and roll into balls. Place on cookie sheet and repeat with remaining dough.

Preheat oven to 350 degrees F (180 degrees C). Place baking sheets in oven and bake for 11-12 minutes, or until edges are lightly browned.

Remove from oven, (don’t worry if the centers is still soft) and let cool 5 minutes on baking sheet before transferring to wire racks. Let cool completely before serving.
