Cooking InstructionsHide images

In a saucepan add Olive Oil (1 Tbsp) and set to low heat.

Add Onion (1), Garlic (2 cloves), Freshly Ground Black Pepper (1/4 tsp), and Fresh Thyme (2 sprigs). Cook for 2-3 minutes.

Add the Pigeon Peas (2 1/3 cups) to the pan.
step 4
Add Stewed Tomatoes (1 2/3 cups) and mix all the ingredients together. Simmer on high heat.

Add in the Fresh Parsley (1 Tbsp), Brown Sugar (1 Tbsp), West Indian Browning (1/2 tsp), Water (1/4 cup), Green Caribbean Seasoning (1 tsp) and break in a Vegetable Bouillon Cube (1). Let it gently boil for 10-15 minutes.
