step 1
In a saucepan add Olive Oil (1 Tbsp) and set to low heat.

Add Onion (1), Garlic (2 cloves), Freshly Ground Black Pepper (as needed), and Fresh Thyme (2 sprigs). Cook for 2-3 minutes.

Add the Pigeon Peas (2 1/3 cups) to the pan.
step 4
Add Stewed Tomatoes (1 2/3 cups) and mix all the ingredients together. Simmer on high heat.

Add in the Fresh Parsley (1 Tbsp), Brown Sugar (1 Tbsp), West Indian Browning (as needed), Water (4 Tbsp), Green Caribbean Seasoning (1 tsp) and break in a Vegetable Bouillon Cube (1). Let it gently boil for 10-15 minutes.
