Step 1
In a saucepan add
Olive Oil (1 Tbsp)
and set to low heat.
Step 2
Add
Onion (1)

Garlic (2 cloves)

Freshly Ground Black Pepper (1/4 tsp)

Fresh Thyme (2 sprigs)
. Cook for 2-3 minutes.
Step 3
Add the
Pigeon Peas (2 1/3 cups)
to the pan.
Step 4
Add
Stewed Tomatoes (1 2/3 cups)
and mix all the ingredients together. Simmer on high heat.
Step 5
Add in the
Fresh Parsley (1 Tbsp)
,
Brown Sugar (1 Tbsp)
,
West Indian Browning (1/2 tsp)
,
Water (1/4 cup)
,
Green Caribbean Seasoning (1 tsp)
and break in a
Vegetable Bouillon Cube (1)
. Let it gently boil for 10-15 minutes.
Step 6
Taste to adjust seasoning as needed. Serve and enjoy!
