It is important to use the malted barley flour as there is no food for the yeast in the Truvia Sweet Complete Granulated All-Purpose Sweetener. If you use traditional flour you will need to add more time to the proof.

Optional:

- For the fresh out of the oven experience reheat the roll in the microwave for 15 seconds.

- Use Truvia Sweet Complete Brown Sweetener with a hint of Molasses in the filling for a richer flavor in filling.

- Sprinkle ¼ cup raisins over the filling before rolling up the dough.

Cooking Instructions

Step 1
First, make an at-home proofer (this keeps the dough warm and humid). To do this, preheat the oven to 200 degrees F (90 degrees C) with a pan of water in the bottom. Let cook for 5 minutes then turn off the oven.
Step 2
Grease a 13x9 backing dish, set aside.
Step 3
In a mixing bowl combine 3 cups of All-Purpose Flour (3 cups) , Truvia® Sweet Complete® Granulated All-Purpose Stevia Leaf Sweetener (1/4 cup) , Salt (1 tsp) , and Instant Dry Yeast (2 packets) . Mix on low for 1-2 minutes.
Step 4
In a microwave-safe bowl, warm the Whole Milk (1 cup) and Unsalted Butter (1/4 cup) in the microwave for 30-40 seconds or until warm (120-130 degrees F or 50 degrees C).
Step 5
Pour ½ of the liquid into the dry ingredients in the mixing bowl and mix on low.
Step 6
Mix in the Egg (1) . Add the remaining liquid to the mixture and mix on low until moist.
Step 7
Mix on medium speed for 3 minutes.
Step 8
Turn the speed to low and add ¼ cup All-Purpose Flour (1/4 cup) . Mix until combined.
Step 9
Scrape out the dough and place it on a surface floured with ½ cup All-Purpose Flour (1/2 cup) .
Step 10
Knead the dough for 8-10 minutes or until all the flour is combined in the dough.
Step 11
Place kneaded dough in a grease bowl and let rest for 10 minutes. This is important to let the yeast hydrate.
Step 12
Make the filling while the dough is resting. In a mixing bowl, combine Ground Cinnamon (1 Tbsp) and Truvia® Sweet Complete® Granulated All-Purpose Stevia Leaf Sweetener (1/2 cup) . Set aside.
Step 13
After resting the dough for 10 minutes, roll out the dough on a lightly floured surface until you get a rectangle that is roughly 14x8 inches, flipping the dough over several times. Use your hands and a ruler to shape the dough into a nice rectangle.
Step 14
Spread the Unsalted Butter (1/4 cup) evenly over the entire rectangle.
Step 15
Sprinkle the cinnamon mixture over the entire rectangle.
Step 16
Now roll up the dough tightly to make a 14-inch log.
Step 17
Cut into 14 pieces and arrange in the greased pan.
Step 18
Cover with plastic wrap and place in the homemade proofer for 60-90 minutes or until the cinnamon rolls double in size.
Step 19
Remove the rolls from the oven and preheat to 375 degrees F (180 degrees C).
Step 20
Bake for 18-20 minutes or until the crust is golden on the edges.

Cool on a wire rack.

In a small bowl whisk together the Cream Cheese (4 Tbsp) , Confectioners Sugar Replacement (1/3 cup) , Pure Vanilla Extract (1/2 tsp) , and Unsalted Butter (2 Tbsp) .
Step 23
Spread on top of the cooled rolls. (or place into a sandwich bag, cut a corner, and drizzle the icing onto the cinnamon rolls).
Step 24
Store in a sealed container to keep tender.
