This is a veganized version of Chrissy Teigen's Pad Thai Carbonara recipe from her new cookbook Cravings, Hungry For More! This vegan version is creamy, comforting and perfect if you're craving both carbonara & Pad Thai! Hearty spaghetti noodles, broccoli, green onions and vegan bacon, tossed in a delicious miso sauce, and vegan eggs.

Garlic , roughly chopped

Thai Chili Powder

Step 1
In a small bowl, whisk together the Sweet Soy Sauce (2 1/2 Tbsp) , Miso Paste (1 Tbsp) and Low-Sodium Soy Sauce (1/2 Tbsp) .
Step 2
In a wok or very large sauté pan add Coconut Oil (to taste) , cook the Vegan Bacon Strips (6 slices) over medium heat until just gently crisped, 6 to 7 minutes.
Step 3
Add the Garlic (4 cloves) and Thai Chili Powder (1/2 tsp) and cook, stirring for 1 minute.
Step 4
Increase the heat to medium-high, add the sauce, and cook until reduced slightly, about 1 minute.
Step 5
Add the Broccoli (1 head) , splash with Better than Bouillon® Vegetable Base (1/2 Tbsp) and cook until just tender, 3 to 5 minutes.
Step 6
Increase the heat to high. Add the Spaghetti (8 oz) and the rest of the stock and cook, tossing, until very hot and the sauce is absorbed, 3 to 5 minutes. If it feels too dry, splash in more Better than Bouillon® Vegetable Base (1/2 Tbsp) a little at a time.
Step 7
Season with additional soy sauce and fish sauce to taste. Add the Egg Replacer (2) and toss until the eggs are creamy. Toss in the Scallions (2) and serve.
