Cooking Instructions

In a large pot, heat the Vegetable Oil (1 Tbsp) over medium heat. Cook the Garlic (4 cloves) and Yellow Onion (1) until they start to brown. Then, add the Cayenne Pepper (as needed), Celery Seeds (1 tsp), and Bay Leaves (2). Cook for a few more seconds until fragrant.

Add the Tomato Sauce (1 can), Vinegar-Based Carolina BBQ Sauce (8 tsp), Sweet BBQ Sauce (4 Tbsp), Worcestershire Sauce (3 Tbsp), and Freshly Ground Black Pepper (to taste). Cook for about 3 more minutes.

Stir in Diced Tomatoes with Green Chilies (1 can), Lima Beans (2 cans), Sweet Corn (1 can), and Turkey Stock (4 cups). Bring to a boil.

Stir in Turkey (13 oz) and Mashed Potatoes (8 oz). Simmer over medium heat uncovered, and occasionally stir for at least 1 hour or until a stew consistency forms, it may take around 1.5 hours.

Taste for seasoning, add more Salt (to taste) and Freshly Ground Black Pepper (to taste), if needed. Then transfer to a serving bowl. Serve with Buttermilk Biscuits (to taste).
Author's Notes
You may make the stock from leftover turkey bone or chicken bone.
