Cooking Instructions
1.
Preheat the oven to 350 degrees F (180 degrees C). Line the baking sheet with parchment paper.
2.
First, make the Bourbon Marmalade. In a saucepan, add Fruit Marmalade (1/3 cup), 1 1/2 Tbsp of juice from Lemon Juice (1), and Bourbon (2 Tbsp) and cook over medium heat until the mixture is well combined.
3.
Remove from heat, add 2 dashes of Orange Bitters (2 dashes), and stir until fully combined. Transfer to a clean bowl and let it cool completely.
4.
Next, make the cookie dough. In a mixing bowl, using a hand mixer cream together the Butter (3/4 cup) and Granulated Sugar (1/2 cup). Whisk over medium speed until well combined.
5.
Add Farmhouse Eggs® Large Brown Egg (sponsored) (1), Orange Zest (1), Vanilla Extract (as needed), and Salt (as needed). Mix until fully combined.
6.
Add in All-Purpose Flour (2 cups) and Corn Starch (2 tsp), and mix until completely combined. Using a one-tablespoon cookie scoop or measuring tablespoon, scoop the cookie dough into 1 Tbsp size dough and roll it into balls.
7.
Place the cookie dough on the lined baking sheet, leaving enough space between each ball. Use your thumb or the rounded back of a teaspoon to gently press an indentation into the cookie dough. Bake for 12-14 minutes.
8.
Transfer the cookies to a wire rack to cool completely. Then fill the cookie indentation with the bourbon marmalade (about ½ tsp each).
