In a stand mixer with the paddle attachment, cream together Unsalted Butter (1 2/3 cups) and Powdered Confectioners Sugar (1 1/2 cups) until light and fluffy.

Add Egg Yolks (1/3 cup) one at a time and Vanilla Extract (1 tsp), and mix until smooth.

Add All-Purpose Flour (4 cups), Salt (as needed), and Baking Powder (1 tsp), and mix with low speed to combine.

Divide the dough into four equal portions. Mix one portion with Red Food Coloring Gel (as needed) and a second portion with Green Food Coloring Gel (as needed). Wrap all the dough with plastic wrap and keep it in the refrigerator for at least 1 hour.

Roll out each dough into a square, about ½-inch thick sheet on a lightly floured work surface or with parchment paper. Using a sharp knife, cut the cookie dough into ½-inch strips. Do the same with all the dough.

Arrange one strip of plain vanilla dough, one green, and another piece of plain dough on a work surface next to each other. Top the second layer with 3 strips with alternating colors. Repeat once more, to make a square log.

Lightly brush each strip with the reserved egg white as the glue to stick them together. Gently press the dough together to ensure no gaps are left in between. Wrap with plastic wrap and keep in the refrigerator for at least 1 hour.

Do the same with the red dough.

Preheat the oven to 350 degrees F (180 degrees C). Line the baking sheets with parchment paper.

Using a sharp knife, cut the dough into ¼-inch thick square slices. Arrange on the parchment paper lined tray.

Bake for about 12-14 minutes, until the cookies are just set but not brown. Remove from the oven and cool on a wire rack.
