Cooking Instructions

Step 1
Soak the Lentils (1 3/4 cups) in a bowl of cold water overnight.
Step 2
Chop the Potato (1) .
Step 3
Slice the Carrot (1) .
Step 4
Chop the Onion (1) .
Step 5
Dice the Tomato (1) .
Step 6
Slice the Mexican Chorizo (5.5 oz) .
Step 7
In a pan, add Olive Oil (as needed) , onion, carrot, and tomato. Cook for 5-10 minutes.
Step 8
Bring the lentils and water to a boil.
Step 9
To the vegetable mixture, add potato and chorizo.
Step 10
Season with Salt (to taste) , Ground Black Pepper (to taste) , and Smoked Paprika (to taste) .
Step 11
To the pot with the lentils, add the Bay Leaf (1) .
Step 12
Add the vegetable and chorizo mixture into the pot with the lentils. Add more water if needed. Cook for 15-20 minutes.
Step 13
Serve and enjoy!
