Step 1
In a large pan over medium heat, add
Olive Oil (2 Tbsp)

Shallots (3)
and
Garlic (2 cloves)
.
Step 2
Season with
Ground Black Pepper (1/4 tsp)
and add the
Chili Pepper (1)
and
Fresh Parsley (2 Tbsp)
and give it a quick stir.
Step 3
Add in
Tomato Paste (2 Tbsp)
and mix well. Cook for a minute.
Step 4
Deglaze the pan with
White Wine (1 cup)
. Raise the heat to reduce the wine by half.
Step 5
Add in the
Canned Tomatoes (1 3/4 cups)
and using a wooden spoon break apart the tomatoes. Season with
Salt (1/2 tsp)
and
Brown Sugar (1 Tbsp)
. Mix well.
Step 6
Stir in
Tomato Passata (1 cup)
. Simmer for about 10 minutes and add the
Fresh Basil Leaves (10)
.
Step 7
Add in the
Fresh Mussels (2 lb)
and stir continuously. Place the lid on and cook for about 5 minutes.
Step 8
Stir in juice from
Lemon (1)
and serve.
