Cut Boneless Pork Chops (3) into strips.

In a bowl, whisk together Sweet Chili Sauce (1/2 cup), Rice Vinegar (1 Tbsp), Dark Soy Sauce (1 tsp), and Lime (1/2).
step 2 In a bowl, whisk together Sweet Chili Sauce (1/2 cup), Rice Vinegar (1 Tbsp), Dark Soy Sauce (1 tsp), and Lime (1/2).

Heat Sesame Oil (2 Tbsp) in a large wok or skillet over high a high flame. Add pork chops and toss with Salt (1/2 tsp) and Ground Black Pepper (1 tsp). Allow the pork chops to sit in the pan for 30 seconds before moving them around. You want to stir them every 30 seconds, until the pork chops begin to lose their pinkness. Do not cook longer than 3 minutes.

Add Yellow Onion (1) and Red Bell Pepper (1) and cook for 30 seconds.

Pour the sauce over the meat and vegetables. Mix to incorporate.

Add the Garlic (1 clove), stir and cook for 30 seconds.

Mix Water (1/2 cup) and Corn Starch (1 Tbsp), then add to the pan. Reduce heat and cook for 1 minute. The sauce will thicken and coat the pork and vegetables.

Serve pork over Brown Rice (to taste), and garnish with Scallions (to taste). Enjoy!
