Mince the Garlic (2 clove) and the Onion (to taste) if using.
In a large pot, add the Bird Pick Organic Lapsang Souchong Tea Leaves (2 tablespoon), Garlic, Onion (to taste), Water (1/2 cup), Hoisin Sauce (3 tablespoon), Rice Vinegar (1 tablespoon), Sesame Oil (1 tablespoon), Bird Pick® Kamahi Honey (1 tablespoon), Salt and Pepper (to taste), and bring to a boil.
Once at a boil, remove from heat and strain out the tea leaves.
Let the marinade cool, and then it is ready for whatever you wish. Roast, bake, or grill as you please!
