First, rinse and drain the Quinoa (1/2 cup) to wash away the bitter outer shell. Use Chicken Stock (1 cup) to either cook it on the stovetop or in a rice cooker.
In a pan, melt the Unsalted Butter (1 tablespoon), low and slow.
Whisk in the Unbleached All-Purpose Flour (1 tablespoon) for 1-2 minutes to draw out the raw flour taste.
Slowly pour in the Milk (1 cup). Bump up the heat to medium and whisk constantly to prevent lumps. As it cooks, it will thicken.
Stir in Aged Cheddar Cheese (1 cup).
Add Broccoli (1 cup).
Add cooked quinoa. And mix well.
Transfer to a casserole dish, cover with more cheese.
Then cover with foil and bake at 350 degrees F (180 degrees C) for 20-30 minutes or until cheese is melted.
