In a pot, add
Beef Broth (29 fl oz)
Use the empty beef broth can to measure
Brown Rice (1 2/3 cups)
. Add a soup can full of brown rice. Stir.
Butter (1 Tbsp)
Bring to a boil over medium heat. Reduce heat to low, cover, and simmer for 35 to 40 minutes, until tender.
Andouille Sausages (12 oz)
into 1/4-inch slices.
Brown sausage in a deep skillet over medium heat, stirring often. Remove from skillet and drain.
Remove grease from skillet, add
Extra-Virgin Olive Oil (2 Tbsp)
and heat until oil is shimmering. Add
Celery (1/2 cup)
Green Bell Peppers (1/2 cup)
Onions (1/2 cup)
Garlic (2 cloves)
. Saute until soft.
Cajun Seasoning (1 tsp)
and stir well.
Return browned andouille sausage to skillet containing sauteed vegetables.
Canned Black Eyed Peas (5 1/2 cups)
with its juices and stir.
Return to low heat and simmer about 15 to 20 minutes, until mixture is of desired consistency.
Add cooked brown rice to the mixture.
Stir and ladle into nice serving bowls.
