Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
In a medium bowl whisk together
All-Purpose Flour (1 1/2 cups)

Baking Powder (1 tsp)
,
Baking Soda (1 tsp)
,
Ground Allspice (1 tsp)
,
Ground Cinnamon (1/2 Tbsp)
,
Ground Nutmeg (1 tsp)
and
Salt (1/2 tsp)
. Set aside.
Step 3
Using an electric mixer or stand mixer fitted with a paddle attachment, cream together
Unsalted Butter (1 cup)
,
Granulated Sugar (1 cup)
and
Brown Sugar (1/2 cup)
.
Step 4
Add
Egg (1)
and
Molasses (2 Tbsp)
and beat to fully incorporate. Stir in
Pure Vanilla Extract (1 tsp)
.
Step 5
Add flour mixture,
Oatmeal (1 1/2 cups)
and
Unsweetened Shredded Coconut (1 cup)
. Mix until just combined and dough comes together.
Step 6
Line baking trays with parchment or silpat mat. Using a 1 ounce cookie scoop, scoop out dough, spacing 2 inches apart.
Step 7
Bake one tray at a time on the middle rack for 10-12 minutes.
Step 8
Remove from oven and allow cookies to cool on tray for 2-3 minutes before moving to a cooling rack to cool completely.
