Preheat oven to 350 degrees F (180 degrees C).

In a medium bowl whisk together All-Purpose Flour (1 1/2 cups), Baking Powder (1 tsp), Baking Soda (1 tsp), Ground Allspice (1 tsp), Ground Cinnamon (1/2 Tbsp), Ground Nutmeg (1 tsp) and Salt (1/2 tsp). Set aside.

Using an electric mixer or stand mixer fitted with a paddle attachment, cream together Unsalted Butter (1 cup), Granulated Sugar (1 cup) and Brown Sugar (1/2 cup).

Add Egg (1) and Molasses (2 Tbsp) and beat to fully incorporate. Stir in Pure Vanilla Extract (1 tsp).

Add flour mixture, Oatmeal (1 1/2 cups) and Unsweetened Shredded Coconut (1 cup). Mix until just combined and dough comes together.

Line baking trays with parchment or silpat mat. Using a 1 ounce cookie scoop, scoop out dough, spacing 2 inches apart.

Bake one tray at a time on the middle rack for 10-12 minutes.
