Preheat oven to 350 degrees F (180 degrees C).

In a medium bowl whisk together All-Purpose Flour (1 1/2 cups), Baking Powder (1 tsp), Baking Soda (1 tsp), Ground Allspice (1 tsp), Simply Organic Cinnamon, Ground (2 tsp), Ground Nutmeg (1 tsp) and Salt (as needed). Set aside.

Using an electric mixer or stand mixer fitted with a paddle attachment, cream together Unsalted Butter (1 cup), Granulated Sugar (1 cup) and Brown Sugar (1/2 cup).

Add Egg (1) and Molasses (2 Tbsp) and beat to fully incorporate. Stir in Pure Vanilla Extract (1 tsp).

Add flour mixture, Oatmeal (1 1/2 cups) and Unsweetened Shredded Coconut (1 cup). Mix until just combined and dough comes together.

Line baking trays with parchment or silpat mat. Using a 1 ounce cookie scoop, scoop out dough, spacing 2 inches apart.

Bake one tray at a time on the middle rack for 10-12 minutes.
