Raisin Spiced Cookies

Preheat the oven to 375 degrees F (190 degrees C).

Pour the Water (1 cup) into a small pot and bring to a boil. Add the Raisins (1 cup) and boil for 8 to 10 minutes. You want about 3 tablespoon of the water remaining. Set it aside and let it cool completely.

In a mixing bowl, add Brown Sugar (1 cup), Granulated Sugar (1/2 cup), and Egg (1). Using a spatula, cream them together.

In a separate bowl, add All-Purpose Flour (1 3/4 cups), Salt (as needed), Ground Cloves (as needed), Ground Cinnamon (as needed), Ground Allspice (as needed), Baking Soda (as needed), and Baking Powder (as needed). Whisk until everything is well combined.

Add a little bit of the flour mixture to the sugar mixture followed by a few of the undrained raisins. Mix until combined.

Do this about 5 or 6 times until you have a smooth cookie dough.

Line a baking tray with parchment paper or spray with baking spray. Using an ice cream scoop or tablespoon, scoop up a couple of tablespoons of the dough and place it on the cookie tray. You want about 3 inches between the cookies.

Place the cookies into a 375 degrees F (190 degrees C) preheated oven for 15 minutes.

Remove the cookies and allow them to cool completely.
