In a mixing bowl, add Brown Sugar (1 cup), Granulated Sugar (1/2 cup), and Egg (1). Using a spatula, cream them together.

In a separate bowl, add All-Purpose Flour (1 3/4 cups), Salt (1/2 tsp), Ground Cloves (1/4 tsp), Ground Cinnamon (1/2 tsp), Ground Allspice (1/2 tsp), Baking Soda (1/2 tsp), and Baking Powder (1/2 tsp). Whisk until everything is well combined.

Line a baking tray with parchment paper or spray with baking spray. Using an ice cream scoop or tablespoon, scoop up a couple of tablespoons of the dough and place it on the cookie tray. You want about 3 inches between the cookies.
