step 1
Heat Extra-Virgin Olive Oil (2 Tbsp) in medium pot over medium heat. Stir in Green Bell Pepper (1 cup) and Yellow Onion (1 cup) and cook until tender, 5 to 7 minutes. Add Jarred Minced Garlic (1 Tbsp) and cook until fragrant, about 30 seconds. Stir in Lean Ground Beef (2 lb) and cook, breaking up with spoon, until browned, about 6 to 8 minutes. Season with additional Adobo Seasoning (to taste) to taste.
step 2
Stir in Tomato Sauce (4 cans), GOYA® Pinto Beans (1 can), GOYA® Red Kidney Beans (1 can), GOYA® Black Beans (1 can), Chipotle Peppers in Adobo Sauce (4 Tbsp), and Dried Oregano (2 tsp) and bring to a boil. Reduce heat. Simmer until chili thickens and flavors develop, about 20 to 30 minutes. Season with additional Adobo Seasoning (to taste) to taste.
step 3
Divide chili among serving bowls. Top with Queso Quesadilla (2 cups), a dollop of Sour Cream (1 cup), Avocados (2), Scallions (2), and Fresh Cilantro (2 Tbsp). Serve with Lime (1) wedges.
