Cooking Instructions

Preheat your oven to 325 degrees F (160 degrees C).

In a bowl mash the
Banana (1)
together with the
Coconut Vinegar (1 Tbsp)
,

Add the
Baking Soda (1/2 tsp)
,
Baking Powder (1/2 tsp)
,
Ground Cinnamon (1/2 tsp)
and
Ground Nutmeg (1/4 tsp)
.

Incorporate the
Egg (1)
and mix. The mixture should start to get a little bubbling, this is the natural chemical reaction of the baking powder with the coconut vinegar!
5.
Add the
Barley Flour (1 cup)
and while stirring, pour in the
Coconut Oil (2 Tbsp)
. Fold in
Mixed Dried Fruits and Nuts (1/2 cup)
.

Grease and flour a 10-12 cm spring-form pan and pour mixture in.
7.
Bake in the preheated oven for about 40-45 min. Remove from oven and let the cake cool down before removing from the pan.
8.
For the topping, smash the
Coconut Chips (2 Tbsp)
using a rolling pin, until they've turned into powder and sprinkle it on top. Slice it up and enjoy it with a nice cup of coffee or tea!
