Step 1
Preheat your oven to 325 degrees F (160 degrees C).
Step 2
In a bowl mash the Banana (1) together with the Coconut Vinegar (1 Tbsp) ,
Step 3
Add the Baking Soda (1/2 tsp) , Baking Powder (1/2 tsp) , Ground Cinnamon (1/2 tsp) and Ground Nutmeg (1/4 tsp) .
Step 4
Incorporate the Egg (1) and mix. The mixture should start to get a little bubbling, this is the natural chemical reaction of the baking powder with the coconut vinegar!
Step 5
Add the Barley Flour (1 cup) and while stirring, pour in the Coconut Oil (2 Tbsp) . Fold in Mixed Dried Fruits and Nuts (1/2 cup) .
Step 6
Grease and flour a 10-12 cm spring-form pan and pour mixture in.
Step 7
Bake in the preheated oven for about 40-45 min. Remove from oven and let the cake cool down before removing from the pan.
Step 8
For the topping, smash the Coconut Chips (2 Tbsp) using a rolling pin, until they've turned into powder and sprinkle it on top. Slice it up and enjoy it with a nice cup of coffee or tea!
