Pepper Frittata with Smoked Salmon

Recipe
This is an easy, open-faced omelet, spiced with turmeric, which is activated by the heat and the little bit of oil, plus a sprinkle of black pepper, which combine to help you absorb the good, immunity-building anti-inflammatory compounds in turmeric. Eggland's Best
ONLY EGGLAND’S BEST hens are fed our proprietary all-vegetarian feed—that’s what makes our eggs more nutritious.

Author's Notes

Crimini mushrooms may replace the shiitake mushrooms but with less savoriness. 2 teaspoons dried thyme may replace the fresh thyme. Crush the dried herb for extra aroma. Lox that is not salty may replace the smoked salmon.
Cooking InstructionsHide images
step 1
Heat a 10-inch skillet with sloped sides over medium heat. Add Olive Oil (2 Tbsp); after 30 seconds, add Shiitake Mushrooms (1 3/4 cups) and Red Bell Pepper (1 cup); cook 5 minutes, stirring occasionally.
step 2
Preheat broiler.
step 3
In a medium bowl, beat together Eggland's Best Organic Eggs (Brown) (6), Milk (3 Tbsp), 1 tablespoon of Fresh Thyme (1 Tbsp), Salt (1/4 tsp), and Ground Black Pepper (1/4 tsp). Stir in Smoked Salmon (4 oz). Set aside.
step 4
Add Ground Turmeric (1/2 tsp) and black pepper to the skillet, stirring for a few seconds. Stop stirring, and pour egg mixture into skillet over vegetables; mix well.
step 5
With a spatula, press vegetables down into an even layer under the egg mixture. Cook without stirring until eggs are set on bottom, about 5 minutes. (Center will be wet.) Transfer to broiler; broil 4 to 5 inches from heat source 2 minutes or until eggs are set.
step 6
Cut into wedges.
step 7
Drop on spoonfuls of Greek Yogurt (2 Tbsp) and sprinkle the remaining one tablespoon Fresh Thyme (1 Tbsp) over frittata before serving.
