Coat a 12-cup muffin tray with cooking spray.

Chop Cherry Tomato (1 cup), Fresh Baby Spinach (2 cups), Onion (1), Mushroom (1/2 cup), and Yellow Bell Pepper (1). Divide the veggie mixture among the 12 muffin cups. Pour the Eggland's Best Liquid Egg Whites (2 cups) over the veggies. Sprinkle with Salt (to taste), Ground Black Pepper (to taste), and Simply Organic Garlic Powder (to taste).
