Author's Notes

For a smoother mousse, make sure both the Guinness reduction and melted chocolate are at room temperature before mixing.

You can adjust the sweetness of the mousse by using a sweeter or more bitter dark chocolate, depending on your preference.

Pour the Guinness® Stout Beer (1 cup) into a small saucepan and bring to a simmer over medium heat. Let it reduce by about half, which should take approximately 5-7 minutes. Set aside to cool.

To melt the chocolate, in a heatproof bowl, place the chopped 70% Dark Chocolate (1 1/3 cups). Over a double boiler or in the microwave in 20-second intervals, melt the chocolate until smooth and completely melted. Set aside to cool slightly.

In a large mixing bowl, beat the Heavy Cream (1 cup) with an electric mixer on medium-high speed until soft peaks form. Be careful not to overwhip. Set aside.

In a separate bowl, whisk together the egg yolks (3), Sugar (4 Tbsp), Vanilla Extract (1/2 tsp) and Salt (1 pinch). Gradually add the reduced Guinness stout, whisking constantly until smooth and well-combined.

Slowly fold the melted chocolate into the egg mixture until fully incorporated. Then, gently fold in the whipped cream, a little at a time, until the mousse is light and airy.

Spoon the mousse into individual serving glasses or bowls. Refrigerate for at least 2 hours to allow the mousse to firm up and develop its rich, creamy texture.
