Rinse the Dried Carrageen Moss (1 1/2 cups) moss under cold water to remove any sand or impurities.

Place the moss in a bowl of cold water and soak for 10–15 minutes until softened.

Meanwhile, prepare the puree. In a small saucepan, combine Fresh Raspberry (1 cup), Granulated Sugar (2 Tbsp), and juice of the Lemon (1/2). Cook over medium heat for 5–7 minutes, stirring occasionally, until the raspberries break down and the mixture thickens.

Strain through a sieve to remove seeds for a smooth purée. Let it cool.

In a saucepan, combine the Whole Milk (2 cups) and the softened carrageen moss.

Split the Vanilla Bean Pod (1) lengthwise and scrape out the seeds. Add both the seeds and the pod to the saucepan (or stir in vanilla extract). Heat the mixture over medium heat, stirring occasionally, until it reaches a gentle simmer. Reduce the heat and cook for about 15 minutes. The moss will release its natural gelling agents, thickening the milk slightly.

Remove the saucepan from the heat. Strain the mixture through a fine mesh sieve to remove the moss and vanilla pod.

Return the strained mixture to the saucepan and whisk in the Granulated Sugar (4 Tbsp) until dissolved.

Gradually whisk the beaten Egg Yolk (1) into the warm milk mixture, stirring constantly to avoid curdling. Heat gently over low heat for 2–3 minutes to thicken further. Do not let the mixture boil.

Pour the pudding mixture into individual serving dishes or ramekins. Allow it to cool to room temperature, then refrigerate for at least 2 hours until fully set.

Garnish with puree and Fresh Mixed Berries (to taste). Serve with Whipped Cream (to taste).
