Author's Notes

Use fresh, mature coconuts for the best yield.
Store coconut oil in a clean, airtight jar at room temperature for up to 6 months.
Use the leftover coconut pulp for baking or smoothies.
For a stronger coconut aroma, allow the oil to naturally separate overnight.

Crack open the Coconuts (4) and remove the white flesh. Rinse well to remove any debris.

Grate the coconut flesh or blend it with warm Water (4 cups) until finely ground.

Strain the coconut mixture through a cheesecloth or fine sieve, extracting as much coconut milk as possible.

Let the milk sit for 12-24 hours until the coconut oil naturally separates from the water.

Skim off the top layer of oil and transfer it to a saucepan.

Heat the oil over low heat, stirring occasionally, until the remaining water evaporates and the oil turns clear (about 1-2 hours).

Strain again to remove any solids. Allow to cool before storing in a clean glass jar.
