Into a mixing bowl, add Extra-Virgin Olive Oil (1/4 cup), Apple Cider Vinegar (1 Tbsp), Agave Syrup (1 Tbsp), juice from Lemon (1), Dijon Mustard (1/2 Tbsp), Garlic (1 clove), Sea Salt (1 pinch), and Freshly Ground Black Pepper (1 pinch). Whisk until well combined, then cover with plastic wrap and set aside.

Thinly slice Red Onion (1/2).

Core Red Apple (1) and cut into 1/2-inch thick cubes. Drizzle the apples with lemon juice to prevent browning.

Cut Manchego Cheese (1 cup) into 1/8-inch cubes.

Finely chop Pitted Dates (3).

Into a serving bowl, add Fresh Spinach (2 cups), red onion, apples, cheese, and dates.

Break apart Walnuts (10) over the salad, then season everything with Sea Salt (1 pinch) and Freshly Ground Black Pepper (1 pinch).

Top off the salad with the apple cider vinaigrette. Serve and enjoy!
