Step 1
Into a mixing bowl, add Extra-Virgin Olive Oil (1/4 cup) , Apple Cider Vinegar (1 Tbsp) , Agave Syrup (1 Tbsp) , Lemon Juice (1 tsp) , Dijon Mustard (1/2 Tbsp) , Garlic (1 clove) , Sea Salt (1 pinch) , and Freshly Ground Black Pepper (1 pinch) . Whisk until well combined, then cover with plastic wrap and set aside.
Step 2
Thinly slice Red Onion (1/2) .
Step 3
Core Red Apple (1) and cut into 1/2-inch thick cubes. Drizzle the apples with lemon juice to prevent browning.
Step 4
Cut Manchego Cheese (1 cup) into 1/8-inch cubes.
Step 5
Finely chop Pitted Dates (3) .
Step 6
Into a serving bowl, add Fresh Spinach (2 cups) , red onion, apples, cheese, and dates.
Step 7
Break apart Walnuts (10) over the salad, then season everything with Sea Salt (1 pinch) and Freshly Ground Black Pepper (1 pinch) .
Step 8
Top off the salad with the apple cider vinaigrette. Serve and enjoy!
