Winter Spinach Salad with Apples and Manchego Cheese

Into a mixing bowl, add Extra-Virgin Olive Oil (4 Tbsp) , Apple Cider Vinegar (1 Tbsp) , Agave Syrup (1 Tbsp) , juice from Lemon (1) , Dijon Mustard (2 tsp) , Garlic (1 clove) , Sea Salt (1 pinch) , and Freshly Ground Black Pepper (1 pinch) . Whisk until well combined, then cover with plastic wrap and set aside.

Thinly slice Red Onion (1/2) .

Core Red Apple (1) and cut into 1/2-inch thick cubes. Drizzle the apples with lemon juice to prevent browning.

Cut Manchego Cheese (1 cup) into 1/8-inch cubes.

Finely chop Pitted Dates (3) .

Into a serving bowl, add Fresh Spinach (2 cups) , red onion, apples, cheese, and dates.

Break apart Walnuts (10) over the salad, then season everything with Sea Salt (1 pinch) and Freshly Ground Black Pepper (1 pinch) .
