Step 1
Start by trimming the fat and cutting up the
Whole Chickens (2.5 lb)
. A sharp knife will really help with this!
Step 2
To make a brine for the chicken, in a bowl add
Buttermilk (2 cups)
,
Green Caribbean Seasoning (1 Tbsp)
,
Hot Sauce (1 tsp)
, and 3/4 tablespoon of
Salt (3/4 tsp)
. Stir together with a whisk.
Step 3
Place the chicken in a tray and pour the brine all over. Cover the tray and let it marinate a couple of hours or overnight.
Step 4
Once it has been marinated, dump the contents out into a strainer and shake it so as to remove the liquid.
Step 5
Preheat your over to 400 degrees F (204 degrees C).
Step 6
In a small bowl add the
Eggs (2)
, 1/4 teaspoon of
Freshly Ground Black Pepper (1/4 tsp)
and
Hot Smoked Paprika (1/2 tsp)
. Beat together and pour over the chicken, making sure to coat every chicken piece in the egg mixture.
Step 7
In a large plate add
All-Purpose Flour (1 1/2 cups)
,
Salt (1/4 tsp)
,
Ground Allspice (1/4 tsp)
and
Freshly Ground Black Pepper (1/4 tsp)
and mix. Take the chicken pieces and toss them in the flour mixture and set aside, letting them rest for 5-10 minutes.
Step 8
After they've rested, coat them a second time in the breading mixture and set on a baking tray with a baking rack. Brush the top of the chicken pieces with a mixture of
Olive Oil (1 1/2 Tbsp)
and
Butter (1 1/2 Tbsp)
.
Step 9
Place in the middle rack of the preheated oven to bake for 50 minutes.
Step 10
Set the oven to broil for a few minutes after 50 minutes have elapsed, to darken the skin a little bit more. Serve with your favorite sides.
