Chop the Red Onion (1/4 cup). Drain the Water Chestnuts (8 ounce). In a large bowl, combine Frozen Green Peas (5 cup), Snow Pea Pods (1/2 cup), Sugar Snap Peas (1/2 cup), red onion and water chestnuts.
Combine Mayonnaise (1/4 cup), Crème Fraîche (1/4 cup), Ground White Pepper (1/8 teaspoon) and Sea Salt (1/8 teaspoon).
Gently fold the dressing into the pea mixture to evenly coat. Place in the refrigerator to chill.
Add Bacon (1/2 cup) prior to serving, and garnish with Pea Shoots (1 handful). Enjoy!
