Herb-Roasted Cornish Game Hen

This is an elegant dish that's easy to prepare, even easier to cook and delicious. The herb-butter give these little birds a bright and herbaceous taste while keeping the meat moist and flavorful.

2 Cornish Game Hen
2 piece Fresh Rosemary , stems removed
4 piece Fresh Thyme , stems removed
4 clove Garlic
4 tablespoon Unsalted Butter
to taste Salt

STEP 1
Preheat the oven to 400 degrees F (200 degrees C).
STEP 2
Remove the giblets and pat the Cornish Game Hen (2) dry.
STEP 3
In a food processor, combine the Fresh Rosemary (2 piece), Fresh Thyme (4 piece), Fresh Parsley (1/4 cup), Garlic (4 clove), Lemon (1), Unsalted Butter (4 tablespoon), Salt (to taste) and Ground Black Pepper (to taste). Blend until fully incorporated.
STEP 4
Using your fingers, carefully separate the skin from the breasts. Place a tablespoon of the herb-butter mixture over the breasts and rub to spread.
STEP 5
Using kitchen twine, tie up the hens legs and tail; then tie the wings to the body. Rub the remaining herb-butter mixture over the birds.
STEP 6
Place the hens on a baking sheet, breast side up, and cook for 50 minutes or until the internal temperature reaches 165 degrees F.
STEP 7
Transfer the hens to a platter and tent with aluminum foil for 15 minutes before serving.
STEP 8
Serve the Cornish Game Hens whole.
