Step 1
Preheat the oven to 400 degrees F (200 degrees C).
Step 2
Remove the giblets and pat the Cornish Game Hens (2) dry.
Step 3
In a food processor, combine the Fresh Rosemary (2 pieces) , Fresh Thyme (4 pieces) , Fresh Parsley (1/4 cup) , Garlic (4 cloves) , Lemon (1) , Unsalted Butter (1/4 cup) , Salt (to taste) and Ground Black Pepper (to taste) . Blend until fully incorporated.
Step 4
Using your fingers, carefully separate the skin from the breasts. Place a tablespoon of the herb-butter mixture over the breasts and rub to spread.
Step 5
Using kitchen twine, tie up the hens legs and tail; then tie the wings to the body. Rub the remaining herb-butter mixture over the birds.
Step 6
Place the hens on a baking sheet, breast side up, and cook for 50 minutes or until the internal temperature reaches 165 degrees F (75 degrees C).
Step 7
Transfer the hens to a platter and tent with aluminum foil for 15 minutes before serving.
Step 8
Serve the Cornish Game Hens whole.
